Turquoise and I have a big grocery shopping day planned, so I thought it might be fun to start a thread for recipes here in the general discussion area. Please join in and post recipes if you have any you want to share. I'll start us off with something relatively simple.
Chicken Fried Rice
Ingredients:
Chicken breast
Leftover long grain rice (you can make it fresh right before, but it works better if it's at least a day old)
Veggies of your choice. I use:
Chicken Fried Rice
Ingredients:
Chicken breast
Leftover long grain rice (you can make it fresh right before, but it works better if it's at least a day old)
Veggies of your choice. I use:
- snow or snap peas
- Baby corn (not marinated)
- Baby carrots
- Water chestnuts
- Lotus root
Eggs
Oil of your choice (I use olive oil, the plain stuff, not extra virgin. Though I'm thinking of trying ghee next time I cook this)
Salt
McCormick black garlic seasoning (optional)
Preparation:
Start skillet to heat to about 350
Cut up chicken into bite size pieces (or get it precut at the meat counter at your local grocery store, that's what I do since I don't actually have a kitchen at the moment). Season with salt and black garlic.
Once the pan is up to heat, put in your oil and then the chicken. Cook until just barely starting to turn golden, then add veggies. Give it a few minutes, stirring things around to keep your chicken from getting over done. Add in the cooked rice and, if needed, more oil or some butter. Mix everything well. After a few minutes, add in the eggs. Stir it all up until the egg is done. Serve. I like to add soy sauce to my own bowl/plate.
This should work with any meat, or as vegetarian. I didn't include any measurements because this is really a recipe that works best by eyeballing it and doing things to match your own tastes. Enjoy.
